    Your cake looks awesome! I also make this cake once a year for my husband’s birthday (July 16). I discovered dried unsweetened coconut a number of years ago and we much prefer this to the sweetened variety. Last year I could not find what I had been using (we live in a rural area of PA and do not have stores like Whole Foods and Trader Joe’s… I did not think about a health food store but later realized that would have been an option). I really did not want the extra sugar and sweetness of the “Bakers” coconut so I bought a fresh coconut, removed the “meat”, peeled the dark skin and shredded the white meat using a Microplane. The frosting was so rich with coconut flavor..yum..out of this world good!

      Oh, that sounds really lovely! I can get unsweetened coconut in the produce section at my supermarket. Maybe I’ll give that a try next time!
